food: tomato sauce with salami and chickpeas

Gunnar Sverrisson / Home and Delicious

Deliciously good pasta, easy and quick to make. A recipe originally from Nigella I do regularly. Saw it  first in one of her TV series, tried it and loved it. Have made it ever since. My daughters also like it so it's in the category of a great family dinner!

Homemade tomato sauce with salami and chickpeas

1/2 red onion, chopped
3 tbsp olive oil
salami, cut into pieces
2x400 g canned tomatoes
400 g chickpeas, may be canned
salt and black pepper
1 teaspoon sugar

Soften onion in olive oil in a pot or a deep pan, add salami pieces and simmer for 5 minutes, stirring regularly. Pour tomatoes into the pot and then chickpeas. Let the sauce simmer on low heat for 10-20 minutes without the lid on. The sauce thickens that way and achieves these gourmet qualities. Drizzle the sugar, taste with salt and pepper. Serve with your favorite pasta and grated parmesan. Voila!
