I feel this is the cake to brake everyones heart this week. A healthy twist; fruits, oatmeal etc to warm and embrace in the cold. 

Apple cake with a healthy twist

Fruits are baked in the oven, here we have apple. On top is dry and crushed dough with nuts and seeds. Sugar should be baker's choice - depending on how sweet the baker wants the cake to be.

fruits:
apples, pears, berries
sugar of your choice, demerara, maple syrup...
dried ginger, cinnamon

Preheat oven to 200 degrees. Slice apples or pears. Sprinkle over the sugar to taste, ginger and cinnamon if you wish. Put in the oven for 20 minutes.

crust:
3 dl wholeweat flour
1 ½ dl almonds or nuts of your choice, mixed in a food processor 
1 ½ dl coconut flakes, sunflower-, sesame-, flax- and poppy seeds
½ teaspoon sea salt
75 g soft butter or coconut oil

Stir all ingredients together and make some dry dough like breadcrumbs. Cool in the fridge for a while.
Put the fruits in the baking dish. The dry dough all over. Bake at 200 degrees for 15-20 minutes. Serve hot with cream, sour cream or greek yogurt.
