food: home made tortillas, totally worth the effort

Gunnar Sverrisson / Home and Delicious

When I started making my own tortillas there was no way back. It's so completely different, it turns out to be a whole new dish and irresistible. It's no effort. Easy to make the dough. A little bit of flour all over the kitchen and a kind of burning smell when the flour burns on the pan, but that's nothing. Just knowing that you can enjoy them in short time, having some left overs the next day or put some in the freezer for later, makes the effort truly worth it - but it is no effort as I told you! Yesterday I made them with minced beef, organic salad, panfried peppers and leek, cheese and sour cream. So delicious and I can't wait having the left overs tonight.

Home made tortillas

3 cups flour, you might need some more
1/2 tsp salt
40 g soft butter
470 ml boiled water

Place flour and salt in a bowl and mix well to combine. Add the butter and, using your fingertips, rub into the flour until mixture resembles fine breadcrumbs. Add the water and using a small spoon until the dough comes together. Knead dough on a floured surface until smooth. Heat a non-stick frying pan over big heat. Divide the dough in around 15-20 pieces, depends on how big you want the tortillas to be. Roll each piece out and cook for 1-2 minutes on each side. As far as I remember this recipe is from Donna Hay.
