baking: muffins for easy mornings

I really wanted something warm and comfy this morning when my daughter woke up quite early. As I was in the mood for baking I made this on on the photo. Guilt-free, super easy to make and to enjoy. I have to admit that I made some frosting for Kaja to spread on, in blue, and it was dangerously delicious. But then not as guilt free! The base of the recipe is from Gwyneth Paltrow’s My father’s daughter cook book I have used to pieces. And as I didn’t have all the ingredients I changed it a bit. 

½ cup vegetable oil
½ cup milk, soy-, almond- or whatever you want
½ cup maple syrup or brown sugar
2 eggs
1 ½ cup whole weat floor or spelt flour
½ cup barley flour
2 tsp baking powder
½ tsp salt
2 cups fresh or frozen blueberries

Preheat the oven to 180°C. Mix oil, milk and eggs in a bowl. Mix the dry ingredients in another bowl. Then put the dry ingredients into the milk mixture and stir well and evenly until combined. In with the berries, stir slowly and not too much as the berries will then make the dough blue. Divide the mixture in muffin cups and bake until a toothpick comes out clean and the muffins are golden, for 20-25 minutes. Cool…if you can.
