Two super simple stews, hearty and healthy meals to enjoy this week. I've been doing these for years on and off and they are always a pleasure for the older and younger ones. Great stews for bringing over some friends and family and having a good and informal dinner.

Vegetable and lamb stew

Remarkably quick and easy to make. Rustical and entertaining when having 
friends and family over for dinner. Hearty food and relevant to the season.

1 kg good meat of lamb, cut into cubes
2 tbs olive oil and 2 tablespoons butter for frying
1 l meat stock
1 ½ kg vegetables, roughly chopped:
-potatoes
-sweet potatoes
-carrots
-beetroots
-onions
-cabbage
-salt and black pepper

Preheat the oven to 100°C. Brown the meat in oil and butter. Season. Put in a large oven proof dish or a casserole. Add the vegetables over and all around. Sprinkle with salt and pepper. Pour the stock over the meat and vegetables and it’s supposed to be floating with stock. Put in the oven for 80 minutes at least, even 2 hours. Sprinkle with parsley before serving with some good bread of your choice. Recipe for 5-6 persons.



Pork and apple stew

Apples are available everywhere and always, and they have 
endless possibilities in cooking and baking.

25 g butter
500 g pork of your choice, cut into chunks
6 shallots or 1 leek, chopped finely
3 celery sticks, finely sliced
grated rind of 1/2 lemon
300 ml apple cider or apple juice
150 ml beefstock or one of your choice
300 g apples, peeled, and cut into rough pieces
3 tbs fresh parsley, chopped
100 ml cream
salt and black pepper

Brown the meat in the butter in a deep pan or pot. Remove it from the pan. Soften the onion in the same pan and juice, add celery, lemon rind, cider and stock and cook for 3 minutes. Put the meat in the sauce and simmer for 25 minutes. Add the apples and cream and simmer for another 10 minutes, adding the parsley and season to your taste. Serve with some potatoes or potato mash, bread or rice. Recipe for 4 persons.
