I promised today to post this recipe. I got the idea on Pinterest and really wanted to try it. I often get great inspiration on cooking and baking there. I have one more recipe in mind I'm hopefully gonna try this weekend. Just wait and see! Ok, I baked it yesterday, had to change some things I didn't have in my pantry and some taste I wanted more than other and here is the result...already had a slice this morning with white-vanilla tea. Delicious!
Tea loaf with butter crumb topping
Batter:
110 g butter
3/4 cup caster sugar
2 eggs
1 1/2 tsk vanilla- or almond essence
1 1/2 cup flour
3/4 tsp baking powder
1/4 tsk baking soda
3/4 cup butter milk
3/4 cup chocolate chips
Preheat the oven to 180 degrees Celcius. Cream the butter and sugar until light and fluffy. Add the eggs and the essence of your choice. Continue stirring until well combined. Add the dry ingredients, not the chocolate chips, and the butter milk. Stir until combined and then carefully add the chocolate. Spoon the batter into a baking pan, spread evenly.
Topping:
3/4 cup flour
3/4 cup brown sugar
3/4 cup cold butter
chocolate chips to spread on the topping
Thoroughly mix the ingredients with your fingertips until it becomes like a clumpy breadcrumbs. Do not over mix. Sprinkle the topping evenly on the cake batter, make sure the whole surface is covered. Spread chocolate chips on the top. Bake for 45 minutes or until a toothpick inserted in the center of the cake turns out clean. Let the cake cool completely before serving.
